VicBob’s Apple Pie Brandy Balls

11 oz Nilla Wafers
1 cup toasted chopped walnuts
1 cup confectioner’s sugar
2 tsp apple pie spice
½ tsp salt
½ cup VicBob’s Oaked Apple Jack
2 Tbsp maple syrup

Spiced-Sugar Coating:
¼ cup granulated sugar and 1 Tbsp apple pie spice

Apple Pie Spice Blend:
2 Tbsp cinnamon, 1 Tbsp nutmeg, 1-½ tsp allspice, 1-½ tsp cardamom

In a food processor, finely grind cookies and walnuts and set aside.  In a large bowl, sift together the confectioner’s sugar, apple pie spice and salt. Add in cookie/nut mixture and mix well.

In a small bowl, whisk together VicBob’s Oaked Apple Jack and maple syrup, then stir into dry mixture until combined. Chill for 30 minutes. Meanwhile, combine the spiced sugar coating.

Scoop dough and roll into ½ Tbsp sized balls. Roll in spiced sugar. Place on lined cookie sheet, cover with plastic wrap, and chill 2 hours.
