Holl’r Girl Amaretto Christmas Cookies
11 oz Nilla Wafers
1 cup toasted almonds
1 cup confectioners’ sugar
2 tsp cinnamon
½ tsp salt
½ cup Holl’r Girl Amaretto Liqueur
2 Tbsp VicBob’s Oak Aged Maple Syrup
1tsp vanilla extract
Coatings:
Cinnamon-Sugar Coating: ¼ cup granulated sugar & 1 Tbsp cinnamon
Chocolate Coating: 1/4 cup cocoa powder
In a food processor, finely grind Nilla Wafers and almonds; set aside. In a large bowl, sift confectioners’ sugar, cinnamon and salt. Add in cookie/nut mixture and mix well. In a small bowl, whisk together Holl’r Girl Amaretto Liqueur, VicBob’s Oak Aged Maple Syrup and vanilla extract. Add wet mixture to dry mixture and combine thoroughly. Chill for 30 minutes. Meanwhile, combine cinnamon-sugar coating. Scoop dough and roll into 1 tablespoon size balls. Roll in cinnamon-sugar coating or chocolate coating. Place on lined cookie sheet, cover with plastic wrap, and chill for at least 2 hours.
